Eat Like A Model: Vegetable Soup

In our series Eat Like A Model, we'll be bringing you a recipe each week. For the first series, we have top tips from vegan model Baya Kolarikova. This vegetable soup is one of her favourites. The ingredients are cooked together in a pot like a broth and the recipe can be personalised to taste by swapping out veggies for whatever is accessible in the model house! When a hot bowl of goodness includes vitamins, minerals and carbohydrates, you can be far from home and still feel cosy.

Recipe
1 large white onion
4 carrots
2 parsnips
1 cauliflower head
Fresh celery
1 horseradish
1 kohlrabi
1 cup split peas
1 sml bag Veggie broth

Method
Peel carrots removing all skin and slice into small pieces. Do the same for the parsnips, kohlrabi and onion, using all of them. Peel horseradish and slice into small pieces only adding a few slices. Cut cauliflower into little florets, add all to the pot! Cut off the top of the celery or coriander and add for taste. Any leftovers can be frozen for another time. Finally, add some beans or split peas to the pot and cover with veggie broth for spice. Cover ingredients with cold water and fill pot almost to the top. Bring to boil and simmer for approximately 1 hour. Serve and enjoy. Yum!
